When I noticed I had three(!) bags of lentils in my cupboard, I hit the internet to find a way to use them. I came across this slow cooker lentil sloppy Joe recipe and knew it was the winner. Easy, health and comfort food. Perfect recipes for three of my favorite things about food, score!
I had all the ingredients, so I got started putting it all into the slow cooker to do the work. Being an Iowan, one of the things I miss when giving up meat is loose-meat sandwiches. It is just loose beef in a bun (much like a sloppy Joe without the sauce) and I always had it topped with mustard, pickles and onions. So that’s how I had to eat this sloppy Joe. It’s an easy, healthy and filling comfort meal.
Slow cooker lentil sloppy Joes
- 2 cups green lentils, picked over and rinsed
- 3 cups vegetable broth
- 28 ounces crushed tomatoes
- 1/2 cup plus 2 tablespoons tomato paste
- 1 medium onion diced
- 1 green bell pepper diced
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1 tablespoon garlic, minced
- 1 tablespoon oregano
- 1 teaspoon paprika
- 1 tablespoon chili powder
- 1/2 tablespoon parsley
- 1/2 teaspoon salt or to taste
- black pepper to taste
- 1/2 teaspoon cayenne, optional
- buns or bread
- Add all ingredients to your slow cooker and stir or whisk until well combined.
- Cook on high 3 1/2 to 4 hours or low for 7 to 8 hours. Test to make sure lentils are cooked through, they should be al dente but not hard. Keep check every 30 minutes after if they’re not done yet.
- If the mixture is nice and thick they’re ready to eat. If it’s still a little too runny for your taste, remove the slow cooker lid and continued simmering another 30 minutes to an hour.
