I’m a sucker for anything portobello or a meal stuffed inside a portobello, eggplant, acorn squash, pepper, etc. Add cheese, and even better!
When I saw the picture of the baked portobello Parmesan on Pinterest, I knew I had to make it. A cross between eggplant/chicken parm and portobello pizza, this is a great dish. With a nice salad or pasta, you have a meal.
This dish is as simple as breading and baking a portobello, then topping it and baking again. That’s it. With my leftover breading and while the oven was on, I made some breaded zucchini chips.
